Traditional Finnish "Sima" mead drink

  • 4 l water
  • 250 g dark sugar
  • 250 g white sugar
  • 1-2 lemons
  • 1/5 tsp yeast
  • raisins

Boil half of the water and pour it into container with the sugar, add rest of water and lemon juice and let the mixture cool so it is lukewarm.

Stir yeast into a small amount of water and add it to liquid. Cover and allow to sit at room temperature for 24 hours.

Bottle the liquid, adding some raisins and a teaspoon of sugar to each bottle.

Liquid continues fermenting so avoid tightening the cap too firmly. Refrigerated, it takes about five days to prepare and in room temperature about three days. Drink is ready when raisins bob up. Keep refrigerated and serve cool within a week.
