Yorkshire Parkin
GB, sweet, baked, vegetarian
- 220 g unsalted butter, soften
- 200 g golden syrup
- 110 g soft dark brown sugar
- 55 g black treacle
- 200 g self-raising flour
- 110 g medium oatmeal
- 4 tsp ground ginger
- 2 tsp nutmeg
- 1 tsp mixed spice
- 1 tsp baking powder
- 2 large eggs, beaten
- 2 tbsp milk
Oven - 275°F / 140°C / Gas: 1
Grease an 8"x8" square tin.
Melt syrup, butter, sugar and treacle together - do not boil!
Mix anything else in a bowl and add to the hot mixture.
Beat it all together, pour into tin.
Bake for 1 1/2 hours until golden brown and firm.
