Yorkshire Parkin

GB, sweet, baked, vegetarian


  • 220 g unsalted butter, soften
  • 200 g golden syrup
  • 110 g soft dark brown sugar
  • 55 g black treacle
  • 200 g self-raising flour
  • 110 g medium oatmeal
  • 4 tsp ground ginger
  • 2 tsp nutmeg
  • 1 tsp mixed spice
  • 1 tsp baking powder
  • 2 large eggs, beaten
  • 2 tbsp milk

Oven - 275°F / 140°C / Gas: 1

Grease an 8"x8" square tin.

Melt syrup, butter, sugar and treacle together - do not boil!

Mix anything else in a bowl and add to the hot mixture.

Beat it all together, pour into tin.

Bake for 1 1/2 hours until golden brown and firm.
